JC MACKINTOSH TOAST of SMOKED LOIN TARTAR
Tartar toast of Smoked Loin JC Mackintosh
20 gr JC Mackintosh Smoked Tuna Loin
15 gr caramelized white onion
10 gr semi-dried tomatoes
5 gr wasabi and citrus sauce
c/s Arbequina oil
15 gr Galician bread
0.5 g Pedro Ximénez
10g creme fraiche
1. Caramelize the onion over low heat until transparent and juicy.
2. Add seasoning, add the Pedro Ximenez wine and coock for a few minutes.
3. Mix in a bowl with the JC Makintosh Smoked Tuna cutted into small cubes and the semi-dried tomatoes.
4. Season with soy sauce and wasabi or similar and set aside.
5. Put a little crème fraiche on the crispy Galician toasted bread and add the tartar.
6. Add the olive oil and chives.
