As in previous years, the portal Gastroactitud wants to recognize through these awards the work of Spanish entrepreneur who with their daily work make possible the survival of gastronomic products of exceptional quality.
The GastroActitud Commitment to the Earth awards are a symbolic gesture designed to support the efforts of those who, in an anonymous or little-known way, work in favor of good nutrition, from the commitment to sustainability. Producers backed by stories and unique trajectories that make them worthy of such an award. Chef Ricard Camarena served as sponsor at the awards ceremony, which has been working for years with farmers, fishermen, butchers and other producers in his environment. With them he has built a network that allows him to cook the landscape of the Valencian Community using each ingredient at its optimum moment.
JC Mackintosh (Tarifa) has been rewarded for preserving bluefin tuna fishing and sacrificing them for the Ikejime system, a Japanese method that avoids suffering the animal. This family business has preserved a minority fishing gear that is absolutely respectful of the sea and the environment. The winery of Victoria Torres Pecis, on the island of La Palma, has been recognized by wines that express the terroir, with local grapes and dry-land vineyards and between 50 and 70 years old; to the García brothers for betting on quality bread and pastries in the Panem bakery (Madrid) and the family company Conservas Rosa Lafuente (Pontevedra) for maintaining the trade and quality in their cans.
Rafael Monge has been recognized by Cultivo Desterrado (Cádiz), a project with which he has recovered traditional crops in the Sanluqueño navazos, where brackish water is used; the livestock Biocoop (Orense) for its work in ecological and preservation of autochthonous breeds in danger of extinction and Luis Lera, from the restaurant Lera (Tierra de Campos, Zamora) for his work of recovering the pigeon, species at risk of extinction, and the culture of the pigeon house, as well as for divulging its culinary use to contribute to the establishment of the rural population.
Quesería Airas Moniz (Lugo) for its revolutionary work with soft or blue cheeses from the milk of Jersey cows raised in the wild; Truffles Alonso (Guadalajara) for its task in favor of the didactic and culture of the truffle, and Nueces de Nerpio (Albacete) for combining under a brand of quality walnuts grown in centennial walnuts.
Alas de Campos, a project promoted by chef Luis Lera to recover the pigeon from Tierra de Campos (Zamora); Exiled crops or return to the agriculture of the Sanlúcar de Barrameda navazos (Cádiz) and the Biocoop (Orense) ethic cattle ranch, received the 4th Commitment to the Earth Awards on Tuesday.
